They’re a quintessential dish for Super Bowl Sunday, one of the most legendary snack foods in existence and a must-have menu item at all of America’s best sports bars: they’re Buffalo wings, and they're wildy popular. But where did they come from?

Crisp, spicy, saucy, juicy and tender, wings have become a staple of American cuisine, yet the dish bears little resemblance to its cousin, straight-ahead fried chicken. There is one place where it all began, and here is where you will find America's best Buffalo wings.

It all began in the now-famous Anchor Bar, located in Buffalo, New York. That's right, the Buffalo wing is named after its birthplace. According to Anchor Bar lore, in 1964, owner Teressa Bellissimo threw some wings, which up until that point were usually just thrown away or used in stock, into the deep fryer and tossed them in an impromptu sauce as a late-night snack for her son, Dominic, and his friends. The rest, as they say, is history. The bar has since gone down as a must-visit when in Buffalo, and its wings are one of America’s most iconic dishes.

So what exactly was in that impromptu sauce that made the nation crave Buffalo wings?

Unfortunately, the signature recipe found on Anchor Bar’s website doesn’t list out all the ingredients. However, classic Buffalo wings are made by tossing deep-fried wings in a mixture of Frank’s RedHot and butter, usually with a few additional add-ins like garlic powder (here’s a recipe). They’re customizable (go ahead and add a dash of the world’s hottest hot sauce if you like), and just about every bar puts its own spin on them. Even some of the biggest celebrity food stars have their own versions.

So while not everyone can make it to Anchor Bar in Buffalo, here are more than 20 other places where you will find the best Buffalo wings in America.


The History of Buffalo Wings

If there was ever a time to dig into the history of Buffalo wings, it’s now, in advance of Super Sunday.

With the big game fast approaching, lots of dips are in the making, and over a billion pounds of chicken wings are in the process of flying off grocery store shelves. Because if there’s one dish that has become a signature football meal, it’s wings—and perhaps the most iconic form of them all: Buffalo wings. But where exactly did they come from, and when were they invented? And how did they become such an illustrious snack?

Controversial Claims

A lot of different foods have controversial origin stories. One person will claim they invented it, while another establishment will say they made it first. When it comes to Buffalo wings, the controversy is a little bit different. Many accounts suggest Anchor Bar was the birthplace of the Buffalo wing, but exactly how Anchor Bar came to make what’s become a nearly ubiquitous appetizer is a little more mysterious.

According to Anchor Bar, the official story is that on March 4, 1964, former owner Teressa Bellissimo whipped up the original batch. Late that night, friends of Teressa’s son, Dominic, a bartender at the restaurant, came to see him. Because they were so hungry, he asked his mom to make a late night snack for his friends. She went to the kitchen where she deep fried some chicken wings and mixed them in a special, spicy sauce. They were an instant hit with Dominic’s pals, and over the course of the next 55 years came to be the game day staple they now are.

Okay, so where’s the controversy? Well, apparently, there have been rivaling accounts to come out of the Bellissimo family over the years. One tale suggests that Frank, Teressa’s husband, and co-owner of the bar, asked his wife to make something special for his predominantly Catholic crowd to enjoy once the clock struck 12 a.m. Many of the patrons were abstaining from meat, and he wanted to show his appreciation for their patronage. She went to the kitchen, and came out with Buffalo wings. Still another account offered by the Bellissimo crew throughout the years suggests that Anchor Bar received a surplus shipment of wings that week, so Frank asked his wife to make something with the extras.

What’s the full, real story? Who knows. Unfortunately, no one is still around to set the record straight. But one thing seems pretty clear: Teressa Bellissimo made the first Buffalo wing on March 4, 1964. Now, at this point it’s important to specify what constitutes a Buffalo wing. A traditional wing is made with parts of a full chicken wing. First, the drumette, flat, and pointer are separated from each other. Then, the drumette and flat are deep fried. Next, they are tossed in a sauce made of butter, cayenne pepper, and hot sauce. Finally, they are served with celery and blue cheese.

This distinction is important because there’s another origin tale floating around that suggests the Bellissimos didn’t actually invent Buffalo wings at all—John Young did.

An Alternate Origin Story

According to a story that ran in The Buffalo News , Young laid claim to inventing the Buffalo wing prior to the Bellissimos. The thing is, his wings don’t resemble what we now know of as Buffalo wings. While he deep fried his wings, they were whole, dipped in batter, and sauced with a tomato-based, tangy Mambo sauce (with no butter). What’s more, they weren’t accompanied with blue cheese or celery.

As a result, I think it’s clear that John Young certainly helped make wings popular as a consumable, sought after part of the chicken. Before you scoff, this was actually no small feat. Prior to the 1960s, wings were either discarded or used for stock since they have far less meat than breasts, thighs, and legs. He also likely paved the way for the plethora of sauces that we now put on drumettes and flats, from BBQ to teriyaki. But he didn’t invent the Buffalo wing. That honor goes to the Bellissimos.

We no longer have to know where Buffalo wings came from. This is the place. Of course we had the wings and fries. They were delicious. The place was hopping for a Sunday lunch time. Cars with plates from all over the U.S. were in the parking lot. This is obviously a very popular place. Service was great. The tables and place was clean, and the staff very friendly. Shannon did a great job taking care of us. Ya just gotta try this place if you're in Buffalo.

Went there for lunch during a conference. The food was great and they gave you your monies worth. Great atmosphere, great service.

Long lines but the food is great. So if you have time it is well worth the wait. If you don't have time, I recommend you call in your order.

We just saw something on the Travel Channel last night about Anchor Bar chicken wings in Buffalo. They said you can have them shipped to you. Are these wings really THAT good to have them shipped? I thought about ordering some for the opening game of the NFL season, but for 50 wings its $45.00! I need someone to convince me that these wings are the best before I put my order in.

I have seen that show on the travel channel - I agree with the last post - buy a bottle of the sauce and make your own.

I just dont think that they would ever be as good as being at the Anchor bar and having them served hot and fresh.

You can always *bake* the chicken wings - it's slightly more healthy, but a little less like Buffalo chicken wings!

I have the sauce and it not as good as the original. I would try for their wings as a one time event. I have eaten at the Anchor Bar and they now have a shop at the airport, really good.

Don't waste your money. its a novelty more than anything. The best part about wings in Buffalo (we hate the term BUFFALO WINGS) is that they are crispy and hot.

If you want an authentic experience, deep fry a dozen wings for 12-15 minutes, pull them out and let them dry, then toss them in some Red Hot sauce and butter. Thats the basic recipe around here, and its far more delicious than something store bought.

Oh, and its Bleu Cheese - not Ranch. and celery, not carrots.

There are as many recipes for hot wings sauce as for chocolate chip cookies. But why reinvent the wheel if we have access to the original recipe. I found the hot wings recipe on Parade’s website and for the most part I follow it. They state that’s it’s truly Teressa’s original buffalo chicken wings recipe so I’m going to believe them. Teressa uses hot sauce, butter, cider vinegar, cayenne pepper, & garlic powder.

As far as brands or types of hot sauce, my suggestion is to use a milder version so that you can control the heat better. In the south a common choice is Crystal and in general Frank’s Hot Sauce is popular. Something like Tabasco is one of the hotter brands.

How Do You Make Buffalo Hot Wings?

In Teressa’s original Buffalo chicken wings recipe she tosses the wings with oil, salt and some flour. I don’t think the oil or the salt is necessary at this stage, the flour however is necessary.

How do you get sauce to stick to chicken wings you ask? Toss the chicken wings in flour, shake off excess. The flour adds texture and will absorb the sauce. So now you know your favorite pub’s secret to keeping the sauce on the hot wings, instead of dripping off and leaving you with a thinly sauced wing.

You can fry, grill, broil or bake the wings. I have tried all of these ways and I by far prefer baking the wings. Frying gives the wings a really nice crisp texture and are delicious, but sooooooo not worth the effort or the added calories and fat of frying. Very incremental difference to baking. I stay away from broiling if I can because I’m notorious for burning things under the broiler, too much on my mind I guess. Grilling is a good alternative, but you should be turning the wings often so it takes more babysitting. Thus, baking is On The Go Bites preference for making hot wings.

Once the wings are cooked toss with the hot sauce. It’s best to place a few wings at a time into the sauce so that the wings get a nice, even coating.

What To Serve With Buffalo Wings

Go with the classics for hot wing sides. Some nice crunchy celery and blue cheese or ranch dressing cool the heat of the wings. Of course an ice cold lemonade or beer helps cool your tongue as well.
