Method of preparation

Season the meat with pepper, thyme to taste, do not add salt, salt strengthens the meat. Place in a high temperature resistant pan (yena, clay, pottery, etc.), then cut the onion into rounds, press the garlic and put them all in the pan, together with the bay leaf, the corinadera beans (if you have them). Pour the wine until the meat is covered, put a lid resistant to high temperature (or you can put foil on top) and put in the oven for 1h30-2h, at a temperature of 200 degrees C. Add salt to the end, at about 1 hour of baking. Serve with any garnish you want, I chose a broccoli garnish with boiled carrots.

Don't have the time and opportunity for an outdoor skewer? Here is the solution - the pork chop prepared in the oven with the taste of skewers!

INGREDIENT:

-5 slices of pork chop (300 gr each, 2 cm thick)

-1 teaspoon ground black pepper

-1/2 teaspoon “garam masala” spice (mixture of ground black pepper, nutmeg, fennel, cardamom, cloves)

-1 tablespoon spice & # 8220stands chiken masala & # 8221 or paprika or chicken spice

For marinated onions:

-5 tablespoons of boiled and cold water.

METHOD OF PREPARATION:

1.Cut the onion in half into thin slices and divide it into 5 equal parts.

2.Combine all the spices and divide the mixture into about 5 equal parts.

3.Prepare each piece of meat with a mixture of spices and rub them well so that they are covered on all sides.

4. Take a portion of onion, squeeze the juice well over the slices of meat and cover them with onions.

5. Grease each piece of meat with oil on both sides.

6. Cover the bowl with plastic wrap and let the meat marinate for 3-4 hours.

7. Take the oven tray, pour 500 ml of water, place the grill on top and the pieces of meat on the grill. As a precaution, take a knife and carefully remove the onion, so that it does not burn.

After 10 minutes, turn the grill so that the pieces of meat, which were behind the oven, are in front. And in another 10 minutes, turn the meat on the other side.

10.Marinate the onion. Mix the water with the vinegar, then add the sliced ​​onion or halves of the rounds, salt and mix well.

11. Then add the chopped dill, stir once more and let the onion marinate for 15 minutes.

12. Remove the meat from the plate, cover with onion and sprinkle with marinade.

You will be pleasantly surprised by the taste so similar to that of skewers!


How to prepare pork pastrami in the oven

First we prepare the brine by putting salt, sugar, pepper, bay leaves and cold water in a bowl. Mix well until the salt and sugar melt.

Put the brine in a plastic box with a lid and dip the meat. It is important that the piece of meat is covered with brine.

Cover the dish and put it in the fridge for 24 hours.

To test if it is ready, we stick a toothpick in the middle of the piece of meat and, if no liquid comes out, it is ready. After that it is left to cool, the string is removed and it can be eaten. Enjoy!

1. Wash the meat with cold water, clean the skins and drain on a grill. Then sprinkle with salt and pepper and sprinkle with red wine. I admit that I have been a fan of cooking in the magic bag since the & # 821770. In Arad there were these bags brought from Hungary or Yugoslavia and I used them quite often. The meat cooked in the special bag always remains juicy and tender, the flavors are concentrated in the own juice left by the meat and spices and the result is always spectacular. So it is with this fan chop.

Because by this method the meat keeps its tenderness and all its own juice, I decided to cook this dish, the fan cutlet, also by this method. By slicing the raw meat, I risked all my own juices coming out of the meat and evaporating in the oven, but thanks to the magic bag, they kept well. The meat didn't even have the appearance and texture of boiled meat (I didn't add water at all) but of a floury and brown steak.

An important step in cooking this fan pork chop is marinating the meat. By cold marinating for 24 hours, the meat becomes tenderer and juicier and is deeply impregnated with the respective flavors. We talked at length about the benefits of marinating meat here.
