  1. Preheat the oven to 180 C / Gas 4. Butter 16 muffin cups or line with paper cases.
  2. Beat the butter and caster sugar together until pale in a large bowl. Beat in the eggs one by one, fully incorporating each one before adding the next. Stir in the lemon zest and flour. Pour the cake mixture into the prepared muffin cups.
  3. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 20 minutes.

Serving ideas

Serve these little lemon cakes with whipped cream, a dusting of icing sugar, raspberry coulis or mascarpone whipped with lemon curd.

In a small bowl (or liquid measuring cup), combine buttermilk with lemon zest and juice. In a medium bowl, whisk together flour, salt, baking powder, and baking soda.

With an electric mixer, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.

With mixer on low, add flour mixture in three parts alternately with the buttermilk mixture in two, beginning and ending with flour beat just until smooth (do not overmix).

Divide batter evenly between pans smooth tops. Bake until a toothpick inserted in centers comes out clean, 50 to 60 minutes (tent with foil if browning too quickly). Cool 15 minutes in pan. Turn out cakes onto a rack cool completely before glazing.

Set rack with cakes over a baking sheet lined with waxed paper. Pour glaze over cakes, letting it run down the sides let dry, about 30 minutes.

For this recipe you will use either TWO regular sized loaf pans or one bundt pan. Enjoy this wonderful dessert friends!

How to make Lemon Pound Cake:

Preheat the oven to 350 F and grease TWO regular sized loaf pans or one bundt pan with nonstick cooking spray.

In medium bowl, beat butter and sugar until light and fluffy.

Add the lemon zest, lemon extract, and eggs. Beat until well combined.

Add the lemon juice and sour cream. Mix until combined.

In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.

Add half the dry ingredients to the butter mixture and mix until combined.

Pour the milk into the bowl and mix.

Add the remaining flour and mix until combined.

Pour the batter into the prepared pan(s) and bake for 45 to 55 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake(s) to cool in the pan for 10 to 15 minutes, then remove it from the pan and place it on a wire cooling rack to cool completely.

While the cake(s) are cooling, make the glaze by mixing the powdered sugar, lemon extract, and two tablespoons of milk. Whisk until smooth. Continue adding milk one tablespoon at a time until desired consistency is reached.

When the cake(s) have cooled, drizzle the glaze over the top. Allow the cake to rest for 10 minutes to allow the glaze to set before serving.

Lemon Pound Cake Recipe

The ingredients are fairly simple for this recipe, but it is important to find good quality and make sure they are fresh to ensure that beautiful crumb!

  • Granulated Sugar – you could use a super-fine granulated sugar
  • Unsalted Butter – we add salt separately so no need to use salted butter here. Make sure it is not cold though.
  • Eggs – room temperature is best. I also prefer to use extra-large eggs.
  • All-Purpose Flour – measure properly! Use a fork to sift the flour in the bag, then a spoon to add the flour to the measuring cup. Level the cup with a knife and add to the recipe.
  • Salt – I prefer kosher salt (a larger granule) in baking
  • Baking soda – fresh is best! – allow the buttermilk to come to room temperature. If you don’t have any you can make your own by adding vinegar or fresh lemon juice to whole milk. Check out four recipes for homemade buttermilk here!
  • Lemon Extract – opt for good quality, like McCormick. One tablespoon of fresh lemon juice is equivalent to 1/2 teaspoon of lemon extract, so if you are opting for fresh lemon juice in this recipe instead of extract, use 1/4 cup.
  • Lemon Zest – grated fresh works best

Mini Lemon Pound Cakes

On their own, the cakes have a nice lemon flavor. But that lemon glaze really ups the lemon ante for big, big flavor. If you want to skip the glaze for a lighter lemon flavor, a simple sprinkling of confectioners&rsquo sugar would be a nice way to add a simple garnish.

These cakes are baked in mini muffin pans to give them that one- or two-bite appeal. I like to serve these in what I suppose is upside-down form. I flip them out of the pan onto a cooling rack and glaze them just like that. It changes things up a bit and creates a little different look that I love.

To get these little cakes just the right size, I highly recommend using a scoop to portion the batter. I use a #50 scoop, which holds about 1 & 1/4 tablespoons. I find that to be just right to get the perfect size and shape. If you use too much batter, you&rsquoll get the muffin-top effect which detracts a bit from the look of them.

When making these cakes, I often find that I have just a bit of batter remaining after portioning 48 cakes. If you have another pan, you may get two or three more cakes out of the recipe. Or if you have a small oven-safe ramekin, you can put any excess there to bake a slightly larger cake.

Let’s be honest, here. Pound cake? Usually not something to write home about. It’s often dry, overbaked, and frankly, a little bland.

Realistically speaking, have you ever bitten into a slice of pound cake and thought “wow, that’s one of the best cakes I’ve ever had!”? Probably not.

Unless you’ve had the pound cake from Stock’s Bakery in Philadelphia. Because that pound cake is quite possibly life changing.

Earlier this summer, while home on maternity leave, my new baby had a medical appointment not too far from the famous Stock’s Bakery, so we popped in and brought home a loaf. And it was amazing.

This glazed lemon pound cake is in no way meant to be a replicate of Stock’s pound cake, but eating a delicious pound cake inspired me to work on some really good homemade pound cake recipes. The secret to Stock’s, we’ve recently learned, is a whole lot of trans fats — the recipe includes a lot of shortening.

I’ve been on a quest for a flavorful cake that isn’t dry and crumbly (and isn’t full of shortening, either). And friends, I think I’ve found it!

But first, let’s talk a little about pound cake in general.

What is a Pound Cake?

Quite simply, pound cake earned its name because it used to be made with four pounds of ingredients. A pound of sugar, a pound of butter, a pound of flour, and a pound of eggs.

While this ratio certainly works to bake a cake, it leaves a little to be desired… especially in terms of texture. The end result is pretty dense and heavy (much more so than what we expect from pound cake nowadays) and it really doesn’t have much flavor.

So how can we make it better?

Baking the Perfect Pound Cake

Let’s take the initial “pound of each” recipe and tweak it a little. We want a cake that is still dense and solid, but not quite so brick-like. And also more moist and flavorful the original is pretty bland and a little dry. What’s the best way to achieve this?

I like to add a little leavening, some sour cream, an extra egg yolk, and increase the sugar/flour ratio a bit. Combined, this results in a pound cake that is more moist and flavorful, but still has that classic pound cake texture.

First up, we’ll tackle the “too dense” problem of the initial pound cake. We can easily fix this by adding some leavening like baking soda or baking powder. Not too much — we don’t want a pound cake to turn into a light and fluffy cake — but just enough to give the cake a little bit of lift.

Next, the flavor. The best way I’ve found to achieve this is to add dairy – like buttermilk or sour cream. I like sour cream (it’s thick enough that the batter doesn’t get too thin) which both adds rich flavor and keeps the crumbs tender and moist. Why does this happen? It’s time for my favorite subject… kitchen chemistry!

Kitchen Chemistry

Adding sour cream to baked goods adds acid (and extra fat) to the batter. Acid in the batter effects the structure of the cake. The additional hydrogen ions from the acid break apart protein bonds, causing them to unravel. This tenderizes the gluten in the flour, and results in a more tender crumb.

How to Make Glazed Lemon Pound Cake

Now we know how to make a pound cake with A+ flavor and texture. But plain pound cake is so, well, plain. If you’ve followed Bunsen Burner Bakery for any length of time, you know lemon is my all-time favorite dessert flavor. So it probably comes as no shock that I’m kicking off my new pound cake obsession with one packed full of lemon goodness.

One of the things I like the most about this glazed lemon pound cake is that it’s made with real lemon. Lemon juice, lemon zest. You can toss in a little lemon extract if you really want to bump up the lemon flavor, but it’s not necessary. Things you won’t find in here: lemon pudding mix, lemon jello mix, lemon cake mix. We’re all about real lemon flavor!

And big, bold lemon flavor, too. There’s nothing worse than a bland lemon dessert – the kind where you’re not really even sure if it’s lemon or not. Nope, not this cake – we’ve got lots lemon zest and juice for a bright, sunshiney, citrusy punch.

This glazed lemon bundt cake is the all-around perfect dessert. Sweet, but not too sweet. Dense without being overly so. Easy enough for a mid-afternoon snack delicious enough for a dinner party. And always perfect for breakfast.

Pick 2 teaspoons small sprigs from tops of lemon thyme sprigs, and divide evenly among molds set aside. Coarsely chop remaining lemon thyme leaves to make tablespoons whisk chopped lemon thyme with the flour, salt, and lemon zest in a small bowl. Set aside.

Put butter into the bowl of an electric mixer fitted with the paddle attachment. Cream on medium speed until pale and fluffy, scraping down sides of bowl as needed, about 4 minutes. Add sugar. Mix until pale and fluffy, scraping down sides of bowl as needed, about 3 minutes.

Mix in vanilla. Add eggs, 1 at a time, mixing well after each addition mix until smooth. Reduce speed to low. Add flour mixture in 3 batches, mixing until just combined after each addition.

Spoon batter over lemon thyme in prepared molds. Smooth tops using a small rubber spatula. Firmly tap the pan on counter to eliminate any air bubbles. Bake until a cake tester inserted into centers comes out clean, about 40 minutes. Let cakes cool slightly in pan on a wire rack, about 10 minutes. Run a knife around edges of molds to loosen unmold cakes. Place each cake on a serving plate, and drizzle with about 1 tablespoon syrup. Garnish with lemon thyme sprigs.

I always have lemons in the house—I add them to water, pop and of course make some great desserts with lemons as well. This Lemon Pound Cake is one of my favorites! It’s moist, luscious, and has just the right amount of sweet lemony flavor!

Why is it called a pound cake? A true pound cake uses a pound of flour, sugar, butter and eggs. Although this recipe doesn’t use those exact measurements, it’s still pretty true to the ingredients and consistency of a classic pound cake—with the addition of lemon flavor, of course!

I love this recipe! I've made it several times and is always a big hit. My mother-in-law especially loves it, so it has become a favorite to make when she's visiting. My favorite old fashioned recipe falls every time I try to make it for some reason and I needed a replacement recipe. This comes close and never falls. It's a crowd pleaser and relatively easy to make. Love it!

When pouring the batter into the pan, be sure to stop when the batter has come to 3/4 the depth of the pan. You will never have a problem with overflow. Also, mix each egg for at least 2 minutes. That makes the texture you want from a pound cake!

I made this cake for my family and they loved it! The little old lady i take care of said it reminded her of her mother, too bad I'm allergic to citrus otherwise Id have some for myself!

I did not want lemon so I used 1 Tbs vanilla instead and added 3 Tbs water to complete the correct amount of liquid content. It is moist but when sliced does not present a pretty slice to be placed on a plate because of the texture. I have other recipes that taste better and are prettier. For me, not a keeper.

This recipe is amazing. It's dense and perfectly lemony. I would recommend not leaving it in the full time, mine got a little too done on top.

I always make my own Greek yogurt (to eat plain, with honey, or to use in any recipe like desserts, pancakes, etc.), using organic, unsweetened, full fat yogurt. I place a colander in a big bowl and place a large cheesecloth or thin cotton, gauzy fabric in the colander with the sides/end of the cloth outside of the bowl. Spatula the yogurt into the cloth (which is in the colander) and fold the cloth over the top to cover a bit. Place into the fridge and let it drain through. I usually do it overnight, but probably 4-6 hours is enough. Then, you have "Greek yogurt" to take out of the cloth. Works perfectly every time. So simple and so much cheaper, not to mention you can have exactly the kind of yogurt you want!
